Chocolate Chip Cookie Oat Balls

Oh my word.

You have to try these.

I follow Tanya's blog, Sunday Baker, which is where I found the recipe for these AMAZING Chocolate Chip Cookie Oat Balls. I saw them the other night and thought they looked interesting enough to try - plus Tanya says she loves having them on hand to satisfy a sweet craving without caving in to junk, so even better!

1 cup of oats
1 cup of nuts (she uses cashews. I used walnuts because I had them on hand and they turned out really good.)
3.5 Tbsp agave nectar
1 tsp vanilla extract
1/4 - 1/2 cup chocolate chips

Put the nuts and the oats in a food processor and grind until flour-ish. Add the agave and vanilla and pulse until it makes a sort-of-sticky dough. Stir in chocolate chips. Use a cookie scoop to place little balls on a cookie sheet. Pop them in the freezer and enjoy when you want a snack!

Also you can use ALL kinds of add-ins with these! Dried fruit, white chocolate, peanut butter, etc. Tonight I'm planning on making some again and using this recipe for glazed peanut butter and chocolate! Yum!
